When I put the word 兴高采烈 in an online translator I got xīnggāocǎiliè.
The remainder of your explanation is quite clear, but the first time you wrote xìnggāocǎiliè not xīnggāocǎiliè.

I typed "change" into a Chinese character dictionary and there were multiple results. First it listed what seem to be root Chinese words, and it seems to me the major ones are biàn and gǎi.
First, can either of those Chinese words stand alone when used in a sentence, or must they be combined with another word?
Secondly, what are the different contexts/meanings of these combinations:
biàn chéng
biàn de
biàn gé
biàn gēng
biàn huà
gǎi biàn
gǎi zào
While I'm at it, I'd like someone to compare these Chinese words for "improve":
gǎi jìn

gǎi shàn
